That depends on your setup. If you are using unsupported custom fields, chances are they will not be exported. All general product data can be exported, no problem.

Then the question is, does all really mean all. Is there any use for the fields like locked_on and locked_by for example. I would suggest to either use the example product export template or create your own and add the fields you need and fine-tune the template after that based on your needs.

We don't use any custom fields. I was hoping to export/import all the product data required in 1 go, for example..

Name, description, category, stock, price, product image. Can this be imported in 1 go?

All the data you mentioned can be exported and imported in 1 go. That is not a problem. You can install the example templates and tweak those or create a template yourself and add the fields.
