I use DP Calendar : https://joomla.digital-peak.com/extensions

Is this possible to update my events using RO CSVI ?

If so, how ?
In the same logic, can i "declare" some fields in the database manually to allow to create some csv import/export manually ? If so, how can i do this ?

1 - Is there a way to work on several table with one process (modify a table and another one with a relation) ? If not, can i "link" to template to modify the first table and the second ?

We do not have any custom table operation to work on many tables with import or to modify a table based on another table. It is always one table operation with custom table import. What you can do is create multiple custom table import templates for each table and use the single tables and import data.

2 - Is there a way to ask to your team plugin for specific component ? Here, i ask for DPCalendar, but there is so many extensions.. Maybe, there is a way to create our own import export "complex" templates or plugins ? Some documentation for this exits ?

RO CSVI does not support all the extensions. Each extension in RO CSVI is a plugin so if DP Calendar has to be added then we need to code a plugin in RO CSVI to support this extension which we do not have as of yet. Also, there is no documentation on creating a custom extension for import or export.

To be more specific, in the database, i have a table "mytable" with some fields inside, can i then declare the table and field to RO Csvi ? In the field section of the component, i can only see "joomla", "virtuemart" and some other component, but i did not find out how to add some "custom" fields / component / extensions...

RO CSVI does not support import/export of DP Calendar extension and so you are not seeing DP calendar in the list. If it is a single table to update then you can use RO CSVI Custom table import to import your events data.
