I created some new customer fields, but csvi is not exporting them.

Not sure why it is not working for you unless if you do not have data stored in your database. Can you send me a Private message of your site login details and database access to check the saved data? I will check export on your site.

No, that cannot be a cause for this.
Can you try something with your export? Remove the filter set for address type for Billing or shipping address in your export template and in template fields add shipping fields shipping_sdi_piva, shipping_pec and shipping_sdi_pvt and run the export. Check if you can see values exported for billing and shipping of custom fields?
Just now, I saw that the domain of the local path in the log is wrong, can be this the problem.
No, that cannot be a cause for this.
Can you try something with your export? yes, I know, I did it another time and it was workign, but in this case, not.
In attachment the fields I added, but the export is empty (the data is in the db).

Hello Davide,
Starting from CSVI 7.11.0 version, User custom fields are made very specific for billing and shipping addresses. So if your custom field is for example user_phone, you should add billing_user_phone and shipping_user_phone fields according to the address you are exporting in your template fields. If you don't see these fields try updating your available fields. Let me know if this solves your issue.
