Hello,
Have a look at VirtueMart product import document to know about the product import. You need to have the required field product_sku in your import file along with the fields which you need to update for a product. CSVI updates only the fields you have in your import file and data stored in other fields are untouched.

I read again the document, but I don't find where the problem come from.
I must have done somthing wrong, because it does'nt work.
For example if I want to update 1 field, I prepare my import file like usual with product_sku en the fiel I want to update, for example product_price.
But it delates all the others.
I used to work with it without, but now it's not the same.
So wich pamameters must I modify ?

Can you post your template XML file, import file and debug log to check? To get the debug log check How to get debug log information? document. To get the template XML file go to CSVI maintenance menu, select CSVI Pro in first option and Backup templates in second option. Select your import template and click continue. Post the downloaded XML file.
