Hello
I would like to know what exactly the option at maintance do
Virtuemart ---> Empty Database
It will erase products / categories and bring virtuemart in clean state without touching anything else like configuration?

Hello,
If you select the VirtueMart -> Empty Database and then click on the Help button it will explain which tables will be emptied. The configuration itself is not touched.
