I am trying to export products from one category, with the option Include/Exclude categories (Include), but I am getting a
504 Gateway Time-out
What am I doing wrong?

504 Gateway Time-out
This error means that your server is not able to handle the export in the set maximum execution time. In your export template on File tab set From record to 1 and To record to 11, save the template and export. Check if you are able to export 10 records.
Also post the debug log of your export to check the fields you are trying to export. To get the debug log check How to collect debug information? document.
