How can i export the GTIN/EAN Number in the order export (order advanced)

Hallo Ronald,
You can't because VirtueMart doesn't store this number with the orders. We are developing a new feature to the order exports that will export product related data from the product information table if the product still exists. Once this is implemented you will be able to export the GTIN number.
This feature is planned for version 6.5.0.
